  1. Preheat oven to 400°. Pat 3 large sweet potatoes, peeled if desired, cut into wedges, rounds, or sticks dry with a paper towel. Place sweet potatoes on a baking sheet and drizzle with ¼ cup extra-virgin olive oil; season with kosher salt and freshly ground black pepper. Toss to coat and spread out in a single layer. Roast until golden brown and slightly crispy, 25–35 minutes.
  2. Mix ½ cup crème fraîche, sour cream, or mayonnaise and 1–2 tsp. sriracha in a small bowl. Serve sweet potato fries with sauce for dipping.
